Did you get an Instant Pot for Christmas this year? We got ours last year and it has become a stable in our kitchen. It even has a space on the counter. Big news in this house. I have some exciting new recipes on the way but before I do, I wanted to share my favorite Instant Pot recipes from 2017.
Red Thai Curry
This was a recipe that Hubs found and we adapted and man oh man, is it delicious. It is spicy and flavorful. It also was my first real time using shallots which was fun. Serve this over rice and you’ve got a great meal.
Potato Leek Soup
This recipe uses vegetables that I haven’t really cooked with: leeks. I didn’t even know what they really were. Hubs calls them giant green onions and he is kind of right. This recipe will require an Immersion Blender but with so many great soup recipes, having one in your kitchen will come in very handy.
Chicken and Rice Soup
I love chicken and rice soup. It is one of my favorite things for any meal. This recipe is so easy, you don’t even have to cook the rice! You literally just toss it all in the pot and 20 minutes later, a hearty soup. I can’t speak more highly of it.
Butternut Squash Soup
This is another recipe that needs the immersion blender. You can also use fresh or frozen butternut squash but in the fall and winter, they’re like a dollar each so buy a bunch and freeze soup for a rainy day.
This recipe was by far the best recipe I shared last year. You HAVE to try it. You can use the saute function to get the vegetables just right and then just toss the meat on top and you’re ready roll.
Using an Instant Pot is great because you can gather all the ingredients, freeze them, and have them on hand for when you just forget to meal plan. If you’re on the IP Train, I would love to know what you’re cooking with it. Let me know in the comments!
