As you know, we’ve been trying to eat healthier. One way is to eat more vegetables. We’ve been wanting to try zucchini noodles for a while and I finally bought a spiralizer to make easy peasy “noodles.” Only, the spiralizer sat for 2 weeks without being used. I finally came up with a recipe and here it is!
First, make some zucchini noodles. We used 3 and it was enough for 2 people to have 2 bowls. Set aside.
Melt some butter in a pan and add your shrimp and some garlic.
When the shrimp are almost done, add some more butter (if needed) and the zucchini noodles.
Finish cooking the shrimp and zucchini. Take out of the pan and enjoy.
The noodles should still be a little crunchy.
Such a good and easy meal. It should take you about 10 minutes to cook it all.
