Earlier this month, I won a McCormick’s seasoning gift box. I’ve never actually won a blog giveaway so I was pretty excited. This first recipe we decided to try was Fiesta Chicken. It seemed very similar to salsa chicken but with a little more added to it.
I put the chicken (frozen because I’m lazy), one can of black beans (drained), one can of yellow corn (drained), two cans of baby diced tomatoes (undrained), and the seasoning packet.
You let it cook on low for 6-8 hours and then serve over rice with some cheese. We used cheddar cheese. I’ve stopped buying pre-shredded cheese for a couple reasons.
1. Buying cheese in block form is cheaper
2. Grating it using my Kitchen Aid produces yummier shredded cheese
3. I’m finally using the $40 grating attachment on a regular basis.
Overall, it was quite delicious and I made enough for 2 days worth of eating. So, now we have leftovers but I think next time, I’ll freeze the other half instead of just sticking it in the fridge. I love keeping meals on hand for lazy dinner nights.
