This week, I thought I’d share how I prep healthy foods for the week.
First, I make smoothie kits for the freezer. I have fruit and spinach in the freezer, waiting to be blended. I usually add a Greek yogurt and that’s one of my breakfast choices.
I also keep hard boiled eggs in the fridge too. I cook up a bunch all at once in the over. I stick them in a muffin tin and bake them for 30 minutes at 325 degrees. For some reason, they get little brown spots on them. I don’t know why but when I peel them, they eggs are fine on the inside. Baking them also makes peeling them SO easy. I usually cook up 2 pieces of bacon and eat 2 eggs for breakfast.
Lastly, I cooked up 5 chicken thighs for lunches. I eat one for lunch with a salad. I’ve been trying to kick the ranch habit so I usually dress my romaine lettuce with tomatoes and some olive oil and some salt. It’s all pretty yummy and super filling. I keep my lettuce chopped and cleaned in the fridge. I’d show you a picture of it but I have to go to the store in the morning. This past weekend was so busy I didn’t have time to grocery shop!
