Have you gotten on the air fryer (aff link) trend? I have been seeing so many recipes on Pinterest lately and so for our eighth anniversary, my parents got us a nice one and the first thing we decided to do make a chicken recipe. Mochiko Chicken is a delicious dish we used to eat in Hawaii. It is lightly fried in a mochiko flour which is a sweet rice flour (aff link) and soy sauce. I thought it would be perfect for the air fryer and I was right. #humblebrag.
The best part of the recipe is that the measurements are all the same! Once you cube the chicken, you need 1/2 cup of sugar, the flour, cornstarch, and soy sauce. Combine all 4 ingredients in the bowl and then lightly scramble 2 eggs and mix well. Make sure the chicken is well-coated so every chicken piece tastes great.
Using the air fryer (aff link) is very easy. You just set the temperature and then put the food in the basket and set the timer. Halfway through, I mixed the chicken around so that it all got the same crispiness level. I had to cook my chicken in 2 batches for about 16 minutes. While the chicken is cooking, cook up some rice to serve with the chicken.
- 1 pound cubed chicken breast
- 1/2 cup granulated sugar
- 1/2 cup cornstarch
- 1/2 cup soy sauce
- 1/2 cup mochiko flour
- 2 eggs, lightly scrambled
- Combine all ingredients in a bowl and thoroughly coat the chicken in the batter
- Set your air fryer to 298 degrees and fill the basket with half the chicken.
- Cook for 8 minutes, open the air fryer and toss the basket of chicken.
- Cook for 8 more minutes.
- Serve over rice.
