Hey y’all! I thought I would take some time to update you on life lately. My birthday was last week and Hubs was lucky enough to get the day off. We decided to drive to the top of Pike’s Peak since it’s on our Bucket List. It was exciting and deserves it’s own post so be on the look out for that.
After we got back off the mountain, we went to TAPAteria – a local tapas place that is 100% gluten free. All the food was soo good. This was shrimp and polenta with green chilies. We have never really eaten polenta before and this was amazing. I want to figure out how to make this dish at home because man, it was awesome.
For dinner, we went out for Mexican food. It was at one we hadn’t been too but we have been to the brand before. This one was good but they didn’t have carnitas like the other one does. It was weird that they had 2 different menus but what can you do? When they brought the chips and salsa, they also brought refried beans to dip and pairing that with some queso was so good. I have no idea why I haven never thought to do that before but here we are. Welcome to 31.
The week before my birthday, I had to go to Virginia for work. I brought along Long Black Veil by Jennifer Finney Boylan which I got for free from Blogging for Books. I wasn’t too sure about what it was about because the inside flap was vague but it was pretty good. The story drew me in and I finished it on the plane on the way to Virginia which meant I had nothing to read on the way home. Whoops. The only downside was that the cast of characters was too big and I got confused as to who was who.
And finally I got a job! I’m still in the reserves but I also got a GS-civilian job and will be starting at the end of the month. Whoop whoop!
