One of the things I love about our Instant Pot is the soup making ability. Not that soup is inherently hard to make but this makes it so much easier. I already shared my butternut squash and chicken and rice recipes so I’m coming back with a potato leek one!
I gave my husband the Official Game of Thrones for Christmas and in it is a delicious leek soup. He asked me to make it and put the ingredients on the grocery list. All he put was leeks. You need many more things so I was left to create my own recipe. Using the leeks, plus the potatoes we had on hand, I think it turned out pretty well.
First I sautéed the leeks in olive oil and added in some garlic. Once that was tender, I added the potatoes and covered with chicken broth. Make sure your release valve is in the “seal” position and set the Instant Pot to a manual timer of 22 minutes. Let the pressure release on it’s own for 10 minutes before kicking over the valve.
Using your immersion blender, blend the soup until smooth. If needed, add more chicken broth until the desired thickness is achieved. Serve with some homemade gluten-free bread and you’ve got yourself a delicious meal.
Potato Leek Soup
- 2 nice sized leeks, diced
- 3-4 russet potatoes
- 2 Tbs olive oil
- 2 Tbs minced garlic
- Chicken broth
- Sauté leeks in olive oil, add the garlic and continue to sauté until tender
- Cube potatoes and add them to the Instant Pot
- Cover with chicken broth. Set Instant Pot on Manual to 22 minutes
- Using an immersion blender, blend soup until the desired thickness is achieved
- Serve with fresh bread and enjoy!
