I don’t know about you but my husband loves brussel sprouts. I just say it’s because he’s British and humor him by eating them for dinner a few times a month. The key is to eat them with bacon. And cook them in bacon fat. The only problem is, sometimes we have leftovers and then I don’t know what to do with them. Well, after looking around Pinterest, I found nothing. So I decided to eat them for breakfast.
All you need is a few brussel sprouts, chopped in half, some bacon, and an egg.
I reheated by brussel sprouts and bacon in a frying pan. Once they started to get hot, I took another frying pan and heated it up. I never cook eggs on a cold pan, it’s weird and takes forever.
Once most of the white is cooked and you can move the egg around on it’s own without sticking to the pan, you’re ready to flip. Flip that bad boy over and cook for, oh 20 seconds or so? Just to get the whites cooked through but not enough to cook the yolk because runny yolk is the best yolk.
Once your egg is done, slide it onto the top of your brussel sprouts and you’re done. Cut into and let that yolk just coat everything. That, along with the bacon can make any brussel sprout delicious.
Now, I know what you’re thinking. What if you really don’t want to mix dinner with breakfast? Try mixing dessert with breakfast instead! The cupcakes have bacon in them so if you really need bacon in the morning, you won’t be going wrong with that!
