A few months ago I had the bright idea to coat a chicken breast in crushed pretzels and stuff it with cheese. I was then diagnosed with celiac disease and so I shelved the idea. Hubs and I have 2 very different chicken philosophies. I found some gluten free pretzels and my plan for stuffed chicken was set in motion. I got Glutino brand and they taste exactly like you think a pretzel should. For this recipe you also need 2 chicken breasts, cheddar cheese, and an egg.
He likes the breasts while I find them to be hard to cook and HUGE, I prefer thighs but I get breasts more often than not because he eats them for lunches too. Lucky for me, chicken breasts are easier to stuff so that is one of my favorite ways to cook it.
First you need to flatten the meat. Blueberry “helped” for approximately 2.3 seconds before I took over. I got this meat hammer from Amazon on Cyber Monday and I am so glad. We had a cheap plastic one and it was terrible. Do yourself a favor and invest in a good one.
To make the pretzel crust, I used my blender to chop it up because my helper refused to crush up the pretzels in a plastic bag with her hands. Where do you find good help these days?
I used an egg as a glue to hold the pretzel crust on and did 1 egg dip, 1 pretzel dip, let the chicken rest for a couple minutes and then I repeated the process. Side note: does anyone else watch the Disney short “That’s Fresh” on the Disney Channel? My kids love it and when I went to start dipping, Blueberry was like “keep your clean hand and your dirty hand.” Man, kids are too observant these days.
Bake it in the oven for 20-30 minutes and then enjoy! I served it with sauteed green beans but you can pick any side dish really.
Here’s the recipe:
- 2 chicken breasts
- 1 cup crushed pretzels, I used Glutino Gluten Free
- 2 ounces of cheddar cheese
- 1 egg
- Pound chicken until flat; crush pretzel until it’s fine so it’s ready to coat the chicken; preheat the oven to 400 degrees.
- Place 1 ounce of cheese in the center of each breast and roll. Secure with toothpicks.
- Roll chicken in egg and then roll in the pretzel. Let rest for 2 minutes and then repeat.
- Bake for 20-30 minutes or until chicken is cooked thoroughly.
