Living in Hawaii is a challenge in the fall. Everyone on the mainland is like “cool weather this,” leaves falling that,” but here, it’s just hot. All the time. So, when September rolls around and the football season kicks back up, we try to cook “fall” foods to get us into the mood.
I have created a recipe for Apple Pecan Cupcakes – because what says fall better than apples and pecan, am I right? Using Pillsbury™ Moist Supreme® Cake Mix and Mott’s® Apple Juice, you can easily hack that box into something amazing. I also used M&M’s® Milk Chocolate Harvest as a garnish because who doesn’t need candy with their cupcakes? I picked all my items up at Walmart, so you should be able to as well!

And now, onto the recipe. You only need a few basic things. The Pillsbury™ Moist Supreme® Cake Mix, Mott’s® Apple Juice, M&M’s® Milk Chocolate Harvest, 3 eggs, and 1 cup of pecans. It also doesn’t hurt to have a Snapple® Apple to enjoy while you bake.
You should make the cake just as the box says on the back with 1 exception, substitute the water for the apple juice.
While the batter is mixing together, take out your food processor and throw in the pecans. Hit it with the burst a few times to make the nuts smaller.
Once the batter is good and mixed, you need to add the pecans. Stir it to make sure the pecans are incorporated and you’ll be ready for baking!
Let the cupcakes cook for about 20 minutes or until a toothpick comes out clean. The box make 12 cupcakes and 1 mini cake but you can do any combination of cake and cupcake that you choose. Take them out of the pan and allow to cool completely before frosting.

Once they are cool, frost them using Pillsbury™ Creamy Supreme® Cream Cheese Icing and decorate with as little or as many M&M’s® Milk Chocolate Harvest you want!
