Let me tell you a little story about a stressed out housewife who was tired of cooking the same things over and over and her husband who swooped in and saved the day. When I cook, I usually do a protein and a starch. Vegetables are always a second thought but that drives my hubs crazy and so he decided to help with meal planning and cooking.
On the weekends, he takes over the kitchen and whips up some mighty good meals. So far, all he’s done is make me wish for more weekends and more good food. And a new obsession with baby bok choy. But I ain’t mad about that.
This is basically an ahi poke bowl with sautéed bok choy. He’s been doing it with a little olive oil, red pepper flakes, salt, and pepper. So good. I mean, I’ve never had bok choy any other way but this is great. We went through a pack from Costco in about a week. No shame in our veggie game.
See? More bok choy. This time with ginger pork chops from the Betty Crocker Cookbook. Hubs has really been embracing it. Usually he goes straight to google for recipes but now, he’s been looking at the cookbook, which I enjoy because so many recipes come straight from my childhood.
Hubs has been raving about guava chicken for weeks. Apparently he tried some at a restaurant one day and hasn’t stopped thinking about them since. He made the marinade and grilled them to perfection. Guava chicken is a local grind and so anything Hawaiian, we embrace. It’s like Asian fusion and delicious. This time, Hubs cooked up some brussels in the same fashion as the bok choy. Perfection.
I honestly don’t want to sound cheesy but man, I am so lucky to have him. He has been really getting into the whole cooking thing which is nice because we eat, like, everyday. I dream of Saturdays and Sundays not just to hang out but to enjoy his creations.
