When we ate dinner at Morimoto’s for our anniversary, one of the dishes was an oil fondue. And it was so good. When the waiter brought it, he told us it was a garlic and anchovy paste mixture in olive oil. Honestly, I was like “anchovy? gross.”
But I was wrong.
It was delicious! I mean, I’ve never really had an anchovy but I knew from reputation that they were tiny, salty fish and because my food tastes are about as mature as a 12-year-olds, I assumed I didn’t like them.
Anyway….Hubs and I wanted to recreate it at home. We bought a bunch of fresh vegetables and some French bread. I heated up some olive oil on the stove and mixed in a garlic and anchovy paste mixture. Once it was hot, we ate it up.
It was pretty good. We’re not an Iron Chef but we did okay. We’ll do it again. We didn’t really measure anything so there was a little bit too much anchovy and that made it a little salty. Next time, we’ll adjust accordingly.
