Do not be alarmed, this is not a repeat recipe. Even though I talked about it before. But these are different. You can eat them for dinner AND breakfast. I don’t know if you picked up on it but I don’t like traditional breakfast food. I’d much rather eat steak and eggs or rice or chicken noodle soup that a huge pile of pancakes. If it’s the most important meal of the day, I want something substantial.
For dinner one night, I made twice baked potatoes. They were small russets so I cooked 5 of them. After the were soft, I took them out of the oven, cut them in half, and spooned out the insides. Then I combined the insides with some broccoli. I refilled the potato skin and baked them until they were hot. We ate it with some seasoned steak from Costco.
We had 2 potato halves left and so the next day, I served them over an egg with runny yolk and some bacon. Delicious. Seriously, I love runny yolk with nearly everything and this was no exception.
