I’ve seen lots of recipes on Pinterest that call for chipotle peppers but I have never been able to find them. Then one day, I was walking down the aisle at the commissary and there they were! Of course, when it came time to cook them, Hubs didn’t like anything I showed him so I made this instead.
First, take a couple of the peppers and chop them up. Stick a couple chicken breasts in a pot and add the peppers and a quarter cup of chicken broth. Like it simmer for a while, I did it for about an hour. While the chicken is cooking, make some yellow rice.
Once the chicken is done, take it out of the pot and set aside. Then get the peppers from the pot (if you need more, use some from the can) and a spoonful of sour cream and blend until smooth and creamy. Place your chicken on a bed of rice and add the sauce. Because it’s a chipotle pepper, it’s spicy. I’m not usually a fan of spicy food but this was so good. As soon as I opened the can of peppers, I knew it would this would be a great meal, the peppers smell so good. I am glad I discovered that our commissary has these because I will definitely be cooking with these again.
