When I told my husband that I wanted to eat salads for dinner for an entire week, I think he may have thought I was going crazy. We usually pack salads for lunch and I’m sure he was like “2 salads in 1 day! But why?!” But fear not friends, because these salads were not just lettuce on a plate with some dressing. Here are five delicious salads and a bonus bruschetta (it’s a salad on bread people!) for your enjoyment. There would have been six salads but we had a farewell to go to and dinner was out that night.
First, the greens I used were baby spinach and a head of romaine lettuce. I chopped them up and just grabbed a plateful. They are the base for each of these salads so now, onto the toppings!
|Blackened Shrimp Salad|
Blackened Shrimp: I cooked up about 24 shrimp in a pan with some butter and blackened seasoning. I didn’t put as much on as recommended because I don’t like my shrimp to be too spicy but you can always add more. Along with the shrimp, I put some avocado, black beans, yellow corn, and a few cherry tomatoes. Drizzle on some olive oil and eat up.
|Crispy Chicken Salad|
Crispy Chicken: We got a huge back of crispy chicken breasts from Costco a while back and our favorite way to eat them is on salad. Hubs using buffalo sauce as his dressing but I keep it more traditional with some ranch. I added some shredded cheddar cheese, cucumber, and cherry tomatoes to complete the meal.
|Fish Taco Salad with Mango Pico de Gallo|
Fish Taco Salad with Mango Pico de Gallo: This was the more adventurous of the salads for me. I cooked up some fish sticks and then put those on the salad. For the pico de gallo, I cut up a mango, red onion, and tomato and used that as the salad topping and dressing. It was pretty good, although Hubs said next time my “knife cuts” should be smaller. Thank you Food Network.
Steak: We use the seasoned steak from Costco to make this. What’s it seasoned with? I have no idea. But it is damn good. Cook the steak in the over with a pat of butter until it’s as cooked as you want it (I like a little pink, Hubs does not) and then serve it with some black beans, yellow corn, avocado, McCormick’s Mexican seasoning, and a drizzle of olive oil. It’s kind of like a burrito bowl. But better.
|Waldorf Chicken Salad|
Waldorf Chicken Salad: This is my version of Waldorf Chicken. I used a can of chicken breast, some green apple, and some walnuts. Put that on the salad and top with some ranch dressing. It’s so good, I dream about it.
Bonus Bruschetta Two Ways: On Friday, we had our Bruschetta. I got some French bread from Target and toasted it in the oven. Then I made my bruschetta. For the first one, I kept it classic: tomatoes, red onions, some oregano, and some balsamic vinegar. Serve it up with some goat cheese and you’ve got a winner. The second one was tomatoes and avocados. Mix in some olive oil, oregano, salt, and pepper and serve with some fresh mozzarella. So yummy, I could eat it buy the bowl.
