Here’s a yummy dish for you. It’s like a baked potato but in casserole form. And everyone loves baked potatoes. Right? Right! Plus, it’s super easy and quick.
Here’s what you need:
2-3 chicken breasts
Red Potatoes (enough for how many people you’re feeding, we did 2 per person)
Salt and Pepper to taste
I took 4 red potatoes and boiled them until they were almost done. While they were boiling, I preheated the oven to 375 degrees. Also, cook up some bacon too. How much? There’s never enough, don’t be silly. Take this time to cook up your chicken breast and cut into bite-size pieces. I just seasoned it with salt and pepper.
Put the potatoes in a casserole dish, sprinkle on the chicken, bacon, cheese, chives, and place some butter all around the dish.
Bake for 30-40 minutes until the potatoes are done and it’s all melty and bubbly. Add some salt and pepper if you need it.
