Are you ready for a super easy (maybe) healthy dinner? Look no further than this dish. In the time it takes to cook noodles, you can make this yummy meal.
First of all, what do you need? Thin spaghetti, squash, zucchini, olive oil, red pepper flakes, and some parmesean cheese. I used Barilla Plus pasta which has added protein and added fiber. It’s a compromise because I don’t like whole wheat pasta but regular pasta isn’t always the healthiest.
While the noodles cooked, I sauteed the squash and zucchini in olive oil. To season it, I added some salt, pepper, and red pepper flakes (if you don’t like spicy food, don’t use too much!). Once the pasta was done, I tossed it into the pan with the vegetables and let it cook together for a couple minutes. Take it out and put it in a pan and the sprinkle some parmesean cheese on top. Then, enjoy!
It looks like there’s a ton of noodles but this is only about a 1/3 of the box and there’s a lot more squash and zucchini underneath the pasta. I thought it was going to take a lot of time to cook but it only took about 10 minutes. It’s been added to our recipe rotation for sure.
