It’s terrible but we make due. It’s also a good thing because even though those places are yummy, they’re LOADED with calories and we’re trying to eat healthy this year.
For these bowls, we made our own black bean puree. I took a can and a half of black beans and cooked them in half a can of chicken broth and the Mexican seasoning blend from McCormicks – haven’t tried it? It’s delicious. I put it on everything. Seriously.
Once the beans were hot, I blended them until they were the consistency of refried beans.
That because the base of our bowl. The rest is kind of boring. I made some Mexican rice and heated up some pulled pork that we got at Costco.
Easy. Boring. Yummy.
The beans take about 15 minutes to cook and the rice takes about 20. It’s a pretty simple and delicious meal for a Monday if you ask me.
