This week, I made a zucchini bake. On our schedule was zucchini boats but they commissary was lacking good stuff-able zucchinis. Life on an island I suppose.
Anyway, so I whipped this up instead. First of all, I preheated the oven to 350 degrees. Once it was heated, I put a couple of tablespoons into a pan and stuck it in the oven to melt it down.
While that was going on, I chopped up 2 zucchinis into half moon shapes and I chopped up about 8 pieces of bacon (give or take, you can never go wrong with more bacon). Once the butter was all melted, I pulled the pan back out of the oven and put the zucchini into the pan. I stirred it around to coat everything in butter and then I added the bacon and some shredded mozzarella.
I baked it for about 15 minutes and then I took it out and we chowed down. It was the only thing we ate for dinner. So yummy. So easy. So healthy? Who cares, there’s bacon involved!
