I’ve been using a lot of recipes from this link lately and so far, they’ve all been delicious. The first one we tried was a succotash. My husband is one of the rare people that like lima beans but this one substitutes in peas. He was not convinced. He said we needed the lime beans to balance out the “bland” corn. So, we ate some ham, which added some salty taste.
First, I melted some butter and sauteed the zucchini. While that was cooking, I cooked the corn on the cob in some milk. Then I cut the corn off the cob, defrosted the peas, and added it to the zucchini.
Once it was all hot, we ate. I added some salt and the hubs added some hot sauce. Overall, we agreed it was delicious and we will surely be making it again. Both the kids ate it and we didn’t even have to make noodle or rise side dish. Bonus!
