This week, I decided to try making stuffed shells. I’ve seen them all over Pinterest and at restaurants but I’ve never tried them before. I made a vegetarian version with ricotta cheese and spinach and then I covered it with a tomato-alfredo sauce.
First, I cooked the noodles and then stuffed them with the goods. I used 1 tub of ricotta and 1 thing of frozen spinach but that was only enough stuffing for half the box. I kept the other half plain and Piglet ate them.
After everything was stuffed, I poured in some tomato-alfredo sauce and baked it at 350 degrees for about 30 minutes. Once the sauce was bubbly, I knew it was done.
It turned out great. I think next time we’ll add some sausage. Or maybe bacon. Can’t go wrong with bacon.
