Last week, I talked about trying 6 new recipes to get us out of a recipe rut.
Every one was a hit!
I used this recipe for Zucchini Boats but instead of bacon, I used Italian sausage and mozzarella cheese. They were really yummy. Here’s the recipe for the Quinoa Broccoli Jalapeno Fritters. I couldn’t find plain quinoa at the commissary so I got the roasted garlic one. I don’t know if plain would be any different but these were damn good. They also changed our mind about quinoa.
Here’s how I made the Sriracha Shrimp. I didn’t make coconut rice thought, just plain rice. It was so good. I only made enough for one serving each and we were both bummed. The One Pot Lo Mein was easy peasy! I actually added too much liquid so I had to drain it before eating but other than that, it was delicious. I was skeptical about the raw chicken and noodles but it all cooked up in about 20 minutes.
On the second to the last day, we made Buffalo Chicken Tacos with a celery and carrot slaw. They were super yummy. Kind of spicy but the slaw helped that out. I sliced the celery using my kitchen aid grater. I usually only use that for cheese so that was super cool! For the last recipe, I made beef and broccoli with Cauliflower Rice. I know I said I was going to make bourbon chicken but for some reason, that morning, I was like “crap, I need beef for dinner!” I completely blanked on the bourbon chicken! Oh well. Another day.
All in all, it was a great experiment. The recipes were all great and they’ve been added to the food planning board for future use. I hope you try them and like them too!
