I love broccoli cheddar soup. I love how creamy and cheesy it is. I don’t really love how unhealthy it is and how little broccoli there actually is. I got a recipie from weight watchers and made some myself.
Step One: Make vegetable broth using a vegetable bullion cube because I couldn’t find any canned in the store.
Step Two: add 4 cups of broccoli and boil until soft.
Step Three: the easiest part, blend until smooth. You end up with a creamy looking, bright green soup. You can just smell how healthy it is.
The soup is creamy and delicious and I thought it tastes better than what you buy in a can or from a store. Also, it was an actual serving of vegetables unlike the store-bought stuff which probably has 1/4 cup a broccoli at best.
Even my husband liked it and I didn’t think he would be too keen on eating a bright green soup. Ha. He added a little creole seasoning to spice it up because he likes his food spicy.
