When I was growing up, this was my favorite FAVORITE meal. My mom would make it regularly and when it was time for a special meal picked by me, chances are I would pick this.
Traditionally, my mom made it on the stove and when I moved out, that’s how I made it too. Until my mom let me in on a little secret….it’s amazing in a crock pot.
Here’s the recipe. I put it together at lunch and by dinner…it’s ready to eat over rice.Luscious Lemon Chicken- 1 pound boneless, skinless chicken thighs or breasts (your choice, I prefer thighs even though breasts are healthier)- 2 cans Campbell’s Cream of Mushroom soup- 1 can mushrooms, pieces and stems- 2 Tbs lemon juicePut it all in the slow cooker for 5-6 hours and serve over rice
